Try these three snack recipes to break your fast or have as an afternoon treat
I've been experimenting more in the kitchen the past few years than ever before. My goal has been to find easy, healthy recipes to break my fast with and have for on-the-go snacks. These three snack recipes are all one-bowl, no-bake recipes, perfect for whipping up last minute. Plus, they are full of healthy fats, antioxdants and low sugar. Since they aren't high in protein, I like to enjoy these and then follow up with a well-balanced meal about an hour later. Enjoy!
1. Super Seed Balls
- 1 cup old-fashioned oats
- 1tablespoon chia seeds
- 1 tablespoon flax seed
- 1 tablespoon raw, unsalted pumpkin seeds
- 1/2 cup peanut butter
- 1 teaspoon vanilla
- 1/3 cup mini dark chocolate chips
Directions: Mix together in a bowl and roll into 2-inch balls. Let set in fridge for two hours.
2. Apple Squares
- 1 cup old-fashioned oats
- 1 cup freeze dried apples
- 1/2 cup dates (pulsed in a food processor before)
Directions: Mix together and pour into a square pan covered with parchment paper. Let set in fridge for two hours.
3. Grain-Free Bars
- 1 cups pecan halves
- 1 cups walnuts
- 1 cup unsweetened coconut flakes
- 2 tablespoons coconut oil
- 1/2 cup almond butter
- 1/4 cup maple syrup
- 1 tsp almond extract
- 1/3 cup unsweetened, sugar-free white chocolate chips or you can grate a bar
Directions: Mix together and pour into a pan covered with parchment paper. Let set in fridge for three hours.
